Opening a new venture needs quality analysis of the place and target customers. APC and COS are important factors to run a restaurant business. The location in Delhi is very tricky and demographic factor with dietary issues are taken into consideration. For exp. muslim dominated or Punjabi dominated areas in Delhi will prefer Non-Veg theme based restaurants whereas Baniya or Brahmin populated areas will prefer vegetarian and thali concept of restaurants.When Space is concerned 30-40% of the total carpet area is consumed by BOH( Back of House ) activities and 60% space is for dine in. The number of covers in a restaurant depends on the concept whether its a fine dining concept or QSR etc. Generally one person take 15 sq ft space in a sit down restaurant. for eg. 600 sq ft area can accommodate 35 pax. keeping the rest space for movement and cashier counter/beverage counter. running cost of restaurants is very tricky it all depends on your menu, COL( labour costs), Rental part, overheads etc. The ideal COS( Food cost ) is 30-35%, Labour 18-21%, overheads or COSV 10-15%( gas,electricity, diesel, coal etc.) and misc expenses.So if you see the profit percentage is 10-15% if the volume is good enough and if the restaurant runs as per norms like licenses, marketing expenses time to time, incentives to staffs etc..
To reduce project cost and operational costs rent part should be less, hiring multi skilled work force, keeping menu simple and elegant, breakages/spoilages should be within limit,preps and forecasting should be strong and foremost hiring a hospitality professional for a new project is utmost. Old BOH equipments in good working conditions can drastically reduce costs. Branding and promotions with strong CRM/ loyalty programme should be carried out in 2nd phase. Good Luck !!
